Best Pot Roast Recipe

This is one of the best and simplest pot roast recipes. The red wine really brings out the flavor of the meat.
Prep Time: 20 minutes
Cook time: 4 hours
Yield: between 4 and 6 people
Ingredients:
- 3 pound beef shoulder or boneless chuck roast
- 1 tbs. olive oil
- Salt and pepper to taste
- Italian seasonings to taste
- 1 diced onion
- 3 cloves diced garlic
- 1 cup of dry red wine
- 4 large carrots, cut and peeled into 1-inch pieces
- 2 pounds of potatoes, cut and peeled into 2-inch pieces
- 3 celery stalks, cut into 1-inch pieces
Instructions:
For best results, wrap the roast in foil and set at room temperature for 2 hours before cooking. Once the roast is at room temperature, rub it on both sides with the salt, pepper and seasonings. In a large pan (oven-proof and big enough to fit the roast and vegetables), add the oil and place the seasoned roast inside of the pot. Brown all sides. Once it’s browned on all sides, lift it up and add the onion to the pan and allows for the roast to sit on the onion while it cooks. Add the wine and the garlic and let simmer for 3 hours. Add the carrots, celery and potatoes and let simmer for an additional hour.
